Mushroom & Asparagus Flatbread Pizza

Flatbread pizza’s are amoung my favorite food to both cook and eat.  They are really easy to make, and the options for topping are nearly endless.  I’ll make them when I’m looking for a light meal, and they are also great for party foods, where you can make several different versions – even let people make their own.  For this flatbread pizza I use mushroom and asparagus, two ingredients that go great together, and hold them together with a bit of gruyere cheese, which has a nutty rich flavor. It only takes about 10 minutes to cook off in a very hot oven, so they are great to put together right before dinner or a party.  Hope you enjoy it!

  1. To make the best mushroom & asparagus flatbread pizza, make sure to the do the following:
  2. Pita bread, naan, and lavash all make good bread choices, just make it sure it’s fairly thin and of good quality
  3. I like to cook the mushrooms until they are well done, and the asparagus until just barely tender so it stays fresh and a bit firm
  4. Don’t over do the cheese.  You only need a thin coating to keep the toppings on, and if you use more, the cheese can easily over power everything else
  5. Use a very hot, 450 degree oven, and bake the flatbread pizza on a pre-heated pizza stone, or heavy pan

Ingredients

  • Pita bread
  • 2 spears asparagus
  • 1/2 cup chopped mushrooms
  • 1/3 cup grated gruyere cheese
  • olive oil

Mushroom & Asparagus Flatbread Pizza

  • Start by cooking the mushrooms and asparagus, which can be done several hours ahead of time
  • Heat a sauté pan over medium heat, and add the chopped mushrooms; season with salt and pepper and cook for about 20 minutes, until the mushrooms are browned, and the moisture if evaporated
  • While the mushrooms cooks, bring a pot of salted water to the boil, and blanch the asparagus until they are just tender
  • Remove the asparagus and drop them into a bowl of cold water to stop the cooking and set the color
  • Dice the asparagus in prep for the flatbread pizza
  • Pre-heat the oven to 450 degrees with a pizza stone, or heavy sheet pan inside
  • Once heated, drizzle the flatbread with olive oil
  • Spread the mushrooms and asparagus over the pita bread, as you would normal pizza toppings (don’t over do it)
  • Spread the cheese over the pizza, and season it all with salt and pepper
  • Move the flatbread pizza into the oven and bake for 5 – 8 minutes, until the cheese is melted and the pita bread is crisp
  • Remove from the oven, drizzle with a bit more olive oil and allow it to rest for a minute
  • Slice up and serve!

Wine Recommendation with Mushroom and Asparagus Flatbread

Asparagus can be a tricky ingredient to match with wine.  Fortunately, the mushrooms, bread and cheese all help to balance that out, and give you a few good choices.  A chardonnay would go very nice with the flatbread.  As would a light pinot noir, which is a great match for mushrooms.
