Italian PorchettaIn this recipe video, I show you how to make an Italian Porchetta. Traditionally it’s made with a whole roasted pig, but frankly, whole pigs are beyond my expertise. For this version, I use pork loin, and belly (which is the cut bacon is made from) and slow roast it with some great herbs and butter. You end up with a wonderful outside crust on the meat, a moist, tender center and flavors that are absolutely to die for. It takes a bit of time to make, but it’s well worth the effort.
