It’s a very luxurious dish, rich with cream and cheese, and makes a perfect accompaniment to a perfectly cooked steak. Of course, I’ll also make it to go with roast chicken, pork, even fish. You can pretty easily do these ahead of time, then bring them up to room temperature, before re-heating. Frankly, they are also great at room temp, or chilled with a nice salad.
