Pizza Sauce
While I love ordering in pizza from any number of my local pizza joints, I’ve found that a great homemade pizza is often more tasty, more satisfying, and best of all, allows me to be much more creative.. With the variety of cheeses and toppings out there, you can really get creative with different pizza’s, but they all start with the sauce. In this recipe video, I show you my pizza sauce recipe. It’s simple to make, because it has just a few ingredients, and you can make it hours, days, or weeks ahead of time.
Recipe Overview and Keys to Success
There really isn’t a whole lot of secrets to making a great pizza sauce. The only things that I’d be careful of are:
- Burning the shallot and garlic. You can start off with medium to low heat to prevent that.
- Not reducing the sauce enough. If the sauce is too thin, it can saturate the pizza and soften the crust. I like to reduce mine so that it’s fairly thick; a consistency like apple sauce or baby food.
Ingredients for Pizza Sauce (enough for two medium size pizzas)
- Tomato sauce – one 15 oz can
- 1 diced shallot
- 2 minced garlic cloves
- Quarter cup of grated parmesan cheese
- 1 teaspoon dry oregano
Making the Pizza Sauce
- Gently sauté the garlic and shallot until soft
- Add the tomato sauce and oregano and stir to combine
- Let simmer for about 30 minutes or until the sauce has reduced slightly
- Add the parmesan cheese to the sauce and stir to melt it in
- Taste the sauce, if it’s bitter, add a few dashes of sugar. Season with salt and pepper
- I like to let the pizza sauce cool before using it, but you don’t have it. It also freezes really well, so no reason not to make a large batch and freeze the extra.
I’ll make a pizza with other sauces, like pesto or béchamel, but this is my sauce for 95% of my pizzas. Hope you enjoy it, and write a comment to let me know how it goes.
