Blue Cheese Burger
The hamburger, is one of the greatest contributions to the culinary arts ever made. Wonderful it in simplicity, it also provides an incredible canvas for creativity. There are as many burger recipes as there are burger makers, and provided the burger is made with a few key techniques, it’ll taste great. In this recipe video, I show you how to make a blue cheese burger…one of my favorites. Not all that uncommon, or crazy, it does provide a departure of the “average” with the tangy and salty blue cheese matching perfectly with the juicy ground beef. They are easy to make, taking about 15 minutes, and not more work than a regular cheese burger. Hope you enjoy them as much as I do.
Recipe Overview and Keys to Success
To make the best Blue Cheese Burger just make sure you to do the following:
- I use ground beef that’s 20% fat. I think it has the best flavor and texture. Of course, you can use leaner beef, chicken, turkey, or anything else…just remember they have different flavor, texture and moisture.
- Season the ground beef with salt and pepper before you form the patties. That allows the seasoning to get all the way through the beef, and provide more flavor.
- You can make the burger as thick or thin as you like, just remember that thicker will take longer to cook (or thinner will go over done faster); and keep in mind that you want to balance the burger, the bun and the cheese….I hate having an enormous burger and tiny-wennie bun…or vise-versa
- Sear the burger over high heat, flip it once and sear again. You don’t need repeated flips, and you don’t need to press the burger, as that drives the juice out (unless you want a dry burger)
RECIPE FOR BLUE CHEESE BURGER
Ingredients for Burger and Steak Fries (for 4)
- 1 1/4 pounds of ground beef
- About 5 ounces of blue cheese
- Hamburger buns
- Olive oil
Making the Blue Cheese Burger
- Put the ground beef into a blow and season well with salt and pepper
- Mix the beef together and divide into 4 equal parts, and then form the patties
- Allow the meat to come up to room temperature
- Heat a sauté pan over medium high heat and add enough olive oil to coat the bottom
- Lay the burgers down (you should hear a good sizzle, if not, allow the pan to get hotter), and allow the burgers to cook for 3 – 6 minutes depending on thickness
- Don’t fiddle with the burgers, just let them go; once the edges start to look cooked, then it's about time to flip
- Turn the burgers over and allow them to sear on the other side, for about 75% of the time you used on the first side
- After flipping the burgers, place the blue cheese equally on all the burgers and cover the pan with a lid, or if you don’t have one, you can use a bowl
- Obviously the longer you cook the burger the more well done it will be; but after just a few minutes the cheese will be nicely melted
- Remove the pan to a holding plate and allow the burger to rest for a minute or two
I like to serve mine up on toasted bun with some ketchup…but how ever you do it, you’re going to love them.
Wine Recommendation: Red meat, blue cheese and ketchup are all big bold flavors, and can easily stand up to a big bold wine. Burgers also make me think of outdoors, picnics and Summer (even in Winter)….as does Zinfandel. The wine is usually full bodied, and nice and fruity with dark, jammy flavors. A perfect match for a blue cheese burger. Enjoy!
