Review Summary
Before getting into the merits and weaknesses of Medifast’s Turkey Meatballs Marinara, I want to point out what (IMO) are the key selling points of all Medifast meals. Weight loss & Convenience.
On those to points, the Chicken with Rice & Vegetables scored well. The meal could not be simpler to make. It comes fully cooked AND shelf stable, so you don’t need to keep it in the fridge. And it means it would be super easy to take one to work, or when traveling, and you don’t need to keep it cool. Hell, you could keep a dozen in your desk at work. It literally takes about 3 minutes to get it fully prepared.
That is where my praise ends.
I didn't like the quality, flavor or consistency of this meal at all. While there were bits of dry chicken that I was able to distinguish, just about everything else looked like baby food. Pale, yellow, a bit salty, and very mushy.
I didn't finish the portion.
Based on the box's picture, I had expectation of the chicken and veggies on a bed of rice. But what I got was more like a stew - very liquid-ie - where the rice was indistinguishable from the rest of the ingredients.
Needless to say, I would not order it again, especially when compared to the Medifast Meatballs which I actually found pretty tasty.
I'd give this one a pass.
Ingredients
Everything that comes in Medifast Flavors of Home meals comes fully prepared and cooked - so there were no ingredients to deal with directly - just the finished dish.
Per the package, the Chicken with Rice and Vegetables includes:
- White chicken strips
- Red bell pepper
- Enriched rice
- Celery
- Mushrooms
- Chestnuts
- Chicken broth
- Green bell peppers
- Various spices...
- Various other things...like yeast extract & xantham gum, that I don't know a lot about, but that often come along with processed food
Making the dish
For many, the best thing about these Flavors of Home meals is there is no “making the dish”. The meals come shipped fully cooked and packaged in a microwaveable tray.
They don’t need to be kept in the fridge, making it really easy to bring them with you wherever you go. Each meal comes in a light cardboard box that has nutrition and heating info. It’s easily removed and you’re left with a microwave ready container.
Simply poke a few holes in the plastic cover to allow steam to escape and microwave on high for about 2 minutes. Obviously times may vary a bit.
Once it rests for a minute you’re ready to eat – either out of the tray, or you can plate it up.
Taste
Honestly, it's hard to find anything that I liked about the flavors in this dish.
The chicken was dry and pretty flavorless. The bell peppers and celery still had some bite to them, but were a very minor element in the dish.
Most disappointing was the rice. I'd expected, well, rice. Individual grains, mixed with veggies and chicken. The reality was a more stew-like consistency, where I could not identify a single grain of rice. That made a really odd consistency for me, that I didn't like at all.

I went in to this recipe expecting a very different thing than I what I got. And I was disappointed with what I got.
While I appreciate that the fact that it's both low calorie (just 300) and that it's super easy to make (2 minutes), I just wouldn't be able to eat the whole tray. I'm sure some folks are going to be ok with the flavor and consistency (and it may be better if it was simply called chicken stew) but I'm not one.
