Review of Home Chef's Teriyaki Ginger Glazed Salmon with Stir-Fried Bok Choy and Carrots
Review Summary
A few weeks ago I would have said getting fresh, great tasting fish delivered in the mail is like getting struck by lighting. Un-Common.
Well, I've been struck. Not once. But twice. A few weeks ago, Home Chef sent me some fish tacos to try. This week it was Teriyaki Salmon. And just like the tilapia, the salmon had great texture, great flavor, and was really high quality. I didn't think such things could happen!
Aside the fish, all the other fresh ingredients where high quality, and what I'd expect. No problems there. Home Chef also provided a teriyaki glaze. To me, that sauce was overly sweet & concentrated, and overpowered the fish a bit. While the directions say to use all of it, I would probably only use half next time.
Except for the sauce (which you can easily adjust for), the dish tasted good, and was the epitome of healthy eating. I did find the portion size was a bit on small side - and given the lack of any starch, some of the bigger eaters out there, may leave the table a bit wanting. It would make a perfect, healthy lunch.
Give this one a try if you're looking for tasty, healthy options...just cut way back on the syrupy sauce that comes with it.
Ingredients
As I mentioned above, all the produce & the fish that came in the box where fresh, clean, and fully met my expectations. The teriyaki sauce tasted OK, but completely overpowered the dish, and so I'd use it sparingly.
The box that came included:
- Chopped ginger
- Garlic cloves
- Green onion
- Carrot
- Baby bok choy
- Red Fresno chile
- Teriyaki glaze
- Salmon fillets
The only ingredients you need to provide are salt & pepper, oil & cooking spray.
Making the dish
Like all the recipes I've gotten from Home Chef, this one came with a beautify designed recipe card, that had pictures, directions, nutritional info, and tips. It's nice to have the card right next to you as your cooking the dish.
Home Chef breaks the cooking down into 5 steps:
- Prepare & prep the ingredients (veggies)
- Make the glaze and prep the salmon
- Sear & bake the salmon
- Begin cooking the vegetables
- Finish the vegetables
Cooking this dish is pretty quick. It took about 40 minutes (of course I as filming, which slowed me down), and all the steps were vey clear. The recipe card had clear directions, useful tips, and I agreed with all the techniques.
I cooked my salmon for the the times suggested on the card, and it was slightly over cooked for me (I like my salmon medium). It's a matter of preference, and my advice would be to adjust the times to yours.
More advanced chefs, may want to cook the fish a bit differently - searing the skin and getting it crispy (that is very tasty), but that's a bit more advanced than the average home cook may want to do.
The biggest change I'd make is holding off on adding any extra glaze to the salmon after it's cooked. Go ahead and give the salmon a taste, before you decide if you want to add any more.
I also think think you can save a bit of time, by changing the order of cooking so the salmon starts after the vegetables. I ended up cooking the veggies a few minutes longer than the salmon; but the directions had to starting the salmon first. So my fish sat around a few minutes while I finished the carrots and bok choy.
Of course doing that...requires getting another pan dirty. Home Chef has you re-using the same plan (which I appreciate), so you can't do both simultaneously. But I don't mind getting another pan dirty.
Finally, if you wanted to make this dish a bit more substantial, you could cook some rice to serve along side the salmon and veggies. It would bulk up the quantity a bit, and help to fill-up the bigger eaters.
Taste
All the ingredients individually tasted very good. Except of the sauce.
And unfortunately, as the last step of the directions was to drizzle the sauce all over the salmon, it really hurt the overall taste of the dish. It ended up making the salmon overly sweet - almost candy-like. And it also had a bit of a "raw" flavor to it. Fortunately, there's an easy fix. Use less sauce.
The sauce I spread on the salmon prior to cooking, helped get a nice char on the fish, lost the "raw" flavor in the oven, and actually tasted quite nice. I'd leave it at that, and skip adding any extra to the salmon after cooking.
That said, maybe you'll love it. So, once cooked, give the fish a taste, and if you want add more teriyaki. Hell, it's your fish - add all the sauce you want.
Most importantly, the fish itself tasted really good. Fresh and not overpowering.
Home Chef reminds you to season the veggies - an important step that many forget - which brings out the flavors. The combo of the carrots & bok choy was nice. And the addition of the chili provided a bit of heat, which made the veggies more interesting.
I probably would have liked a bit of rice to balance out the dish - and to offset the sweet teriyaki sauce. But obviously, it's a bit healthier without it.

Overall
Can't say enough good things about the quality of the salmon I got. I had low expectations going in, but would happily order fish recipes again from Home Chef.
This dish is very clearly a healthy choice for people who want to eat right. It's also pretty damn tasty - minus some of that sauce that I clearly didn't like very much.
Some will find the portion size too small for a dinner meal....but you can always add a bit of rice if you want to bulk it up for a bigger eater.
