While chicken can be tender, juicy and flavorful (when cooked well), let's face it, it can also be pretty boring! And we eat so much of it...on average more than a chicken breast per week per person! That's where a perfect sauce for that chicken comes in. A sauce is an easy way to add flavor and texture to your next chicken meal. And there are dozens of easy sauces you can make. If you cooking the chicken in a pan, a simple pan sauce with some wine, stock and maybe some garlic & onion will only take a few extra minutes. You can do raw herb sauces like salsa verde. And cream based sauces a luxurious and add body & substance to otherwise lean chicken. Sauce possibilities abound! Browse around, and I'm sure you'll find sauce perfection!

    Chicken Breasts with Mushrooms & Gruyere

    I cook with Mushrooms & Gruyere cheese frequently, and the bring both together for this Sautéed Chicken Breast with Mushrooms & Gruyere.  It is a great way to make chicken breasts, which can be a bit boring into something special.  To cook the chicken I use the same technique I use for a lot of dishes, simply searing the breasts off in a pan .
