How to Clean a Chicken
Here is a simple technique video where I show you how to clean a chicken. I end up cooking a whole roasted chicken at least once a month, and I gotta say, my least favorite part, every single time, is pulling that chicken out of the bag, getting the "parts" out of the cavity, and getting it clean. But, you gotta do it and frankly, if your know what you're doing, it only takes a few minutes. Watch this video to see me do it, and let me know if you have any questions.
HOW TO CLEAN A CHICKEN
- Get a cutting board or large plate ready, and cover it with a few layers of paper towel
- Make sure the bird is not frozen; if it is, allow to thaw out
- Hold the bag at the top (where it is sealed) and use a knife, or scissors to cut away the top of the plastic bag
- All of the juice will remain, collected at the bottom of the bag
- Grab the chicken by the drum sticks and lift it out of the bag
- Discard the bag and the juice that remains in it; and lay the chicken on the cutting board where the paper towels will absorb any moisture
- Reach into the cavity of the bird and remove the liver, heart, gizzard (and anything else up there)
- You can absolutely use these parts, or discard
- While use used to rinse my chicken under the faucet, I generally don’t anymore – unless it looks like it really needs it. I figured no need to spread the raw chicken juice everywhere
- Before you cook the chicken, I like to leave it uncovered for about an hour to help dry the skin, which will make it more crisp as it cooks
