There is something special about cooking a whole chicken. The flavors develop so well, the presentation looks fantastic, and it’s actually easier to keep the meat tender and juicy. When my 3 yr old announced “I love chili”, it quickly became a staple on our dinner table; as the options that she “loves” are pretty limited. While, I’d say that homemade chili is actually pretty good for you, I started making turkey chili, which is a bit lighter and healthily than traditional beef or pork. I made this Chicken Marinara recipe after thinking about ways I could put a spin on a more traditional chicken parmesan…and I think you’ll notice that it is indeed very similar. Flatbread pizzas have become a stable in my house, and this version of Mediterranean Flatbread Pizza is one of my favorites. I generally use pita bread, or nann, as the base (which saves a ton of time) and since the “sauce” is really just the toppings, it only takes about 15 minutes to make.

Meatballs are for more than just spaghetti or sub sandwiches. These delicious little morels can and should stand on their own. This recipe for Mini-meatballs is perfect for parties, where you’ll looking for “tooth-pick” food.
