Grilled Pork Chop with Mango Sauce
I love cooking pork in all it’s wonderful varieties, but a nice thick grilled pork chop is definitely one of my favorites. There are several different ways to cook pork chops; in this video recipe, I show you a grilled preparation. Pan, or oven roasting, is great, but the smokiness and char that you can get on the grill adds a unique and delicious flavor all its own, and I’m sure to make grilled chops a few times a year. Fruit is also a great match with pork, and for this recipe, I make a mango sauce that provides some sweetness and heat, that really elevates the flavor of the pork. Hope you enjoy it as much as did.
Recipe Overview and Keys to Success
- Brining the pork chop is not strictly required, but I sure do recommend it. A good brine will add flavor and moisture, and give you a bit more leeway when it comes to not overcooking the meat.
- Don’t overcook the meat. Dry pork = not good. Brining helps give you a bit of cushion. As does buying thick, double cut chops. Also now that there are new guidelines for cooking pork…”medium to med - well” is a totally acceptable (I say preferred) doneness.
- Finally, use very high heat to get a good sear on the outside…it will only take about 8 minutes to cook through
- 2 Double cut pork chops
- Ground cumin
- Pork chop brine (optional)
- Mango Sauce
- Brine the chops for 5 – 8 hours
- Remove the chops from the brine and dry them. Allow them to come up to room temperature
- Season with cumin, salt & pepper on both sides; coat them in olive oil
- Lay the pork chops on a super hot, pre-heated grilled and allow them to sear for 3 – 5 minutes depending on their thickness; don’t play, turn or mess with them
- Turn the pork chops over and sear the other side for about 1 minute less time than you did the first side
- Test the doneness using either the firmness test…or use a meat thermometer
- Pull the chops off the grill and allow them to rest for 4 – 5 minutes covered
- Plate the chops and then drizzle the warmed sauce around the plate
As you can see, I served the pork chop with a some nicely roasted tomatoes…through on some Brussel Sprouts and you’ve got the perfect meal. Enjoy!!
